Rooted in seasonal ingredients and traditional techniques, our approach celebrates the beauty of simplicity while leaving room for playful innovation.
We value community, creativity, and intention. Whether we’re catering a special event, teaching the art of dough, or writing about our travels through Pizza Tourist, everything we do is guided by curiosity, integrity, and a deep respect for the culture of food.

Ines Glaser grew up internationally as the daughter of diplomats. No matter where she landed, one thing always connected her to her peers: pizza. Before launching Lupa Cotta, Ines worked in film and television production on the show Survivor, which took her across Central America, Asia, and the South Pacific.
With a deep interest in food culture, travel, and entrepreneurship, Ines set out to immerse herself in the craft of dough & fire. Her journey took her from pizza school in Naples (AVPN) to the line at one of L.A.’s top Italian restaurants (Sotto), and later to apprenticeships with world-renowned chefs in Copenhagen (Bæst). With eager anticipation, Ines launched Lupa Cotta by popping up at natural wine bars across Los Angeles.
Since then, the boutique pizza venture has evolved over years—from offering DIY pizza kits, providing experiential cooking for high-profile clients, media partnerships, and dough consulting for restaurants.
A moveable pizza feast
Today Lupa Cotta is a nomadic pizza boutique known for dough consulting, recipe development, experiential catering, and Pizza Tourist —a newsletter filled with inventive recipes, travel guides, and honest reflections on building a unique business from scratch.
